Afternoon apple fritters. (Taken with instagram)
I whipped these up in about 5 minutes & the girls both gobbled them up like crazy.
I found this recipe on Pinterest (of course) & I tweaked it to fit my dietary needs. Here’s how I did it:
I used only 1 Fuji apple b/c I was only making them for the 4 of us. I got 6 slices out of the apple.
For the flour I used 2/3 c of a combo of flaxmeal (like 1 or 2T to act as the binder), Bob’s Red Mill Brown Rice Flour & Trader Joe’s Almond Meal.
I skipped the lemon peel, added a small smidge of Pumpkin Pie Spice (from TJ’s), a small bit of vanilla extract & some extra cinnamon. I didn’t add any sugar into the batter.
I used unsweetened vanilla Almond Milk instead of regular milk. Other than all that the recipe is fairly the same. ;) They were so tasty! A perfect rainy day treat.
